Make-It Monday

Here is a great breakfast recipe.  The possibilities with it are as endless as your imagination, and it's a great way to get protein into the kids before school!  Our little ones love it, and when you do the scrambled/omelette style they can carry it with them, even into the car to eat while you drive.  Think of it as a two-bite omelette!  You may even have thought of this yourself already.  Enjoy!

Ham and Egg Cups



The basic idea is this: Put a ham slice (sandwich meat style) inside a muffin tin.  Add an egg inside and bake at 400.  The time will depend on what you are making.  I like to make them up early, then get ready while they bake.  If I'm up early enough I put them in while we read scriptures while they bake.  Here are some ideas:

Basic Egg: Crack an egg into the ham and bake until you get the style you like, shorter for runny, longer for hard cooked.

Omelette: Scramble the eggs first.  Add other ingredients if you want.  My kids like cheese, real bacon bits, mushrooms, red pepper, etc.  All the things you add to big omelettes.  Or, just do scrambled eggs plain.  These will take about 15 minutes to bake.  Check with a fork to make sure it's done. 

I also came across one idea when looking for a picture where someone had pressed bread in the tin, then ham, then eggs.  I guess that would be like a whole breakfast in one!  A little much for me, but you could experiment and try things out.  P.S.: you don't need a lot of seasonings, especially salt, because the ham base has so much.

While we're on the subject of egg breakfast, I thought I would include one more that was always a classic in our home growing up, especially for one of my sisters. 

German Pancakes, or Hootenanny



1/4 c. margarine
6 eggs
1 c. milk
1c. flour
1/4 tsp. salt

Heat oven to 400.  Put butter in 9x13 pan and melt in oven while mixing the other ingredients together.  When the butter is melted, pour the batter into the pan.  Bake for 20 minutes.  The kids will love how this grows up high and get all bubbly.  It will fall a bit after you take it out.  Cut into squares and serve with syrup.

Editor's Note: We tried the Peanut Butter Muffins from last week, and they were a huge hit.  Just different enough to be interesting.  The most popular was the jam added on top.  Yummy!

  2. we make the pancakes all the time. I like that you whiz it up and then it bakes for 20 minutes. that gives me time to set the table, make the juice/hashbrowns/bacon...whatever you like to eat with your breakfast. Easier sometimes than having to keep flipping pancakes or french toast.

    The egg cups sound awesome! i'm definitely going to try them!

  3. We have German pancakes all the time. Delish!!! Even Gus loves them. I'm totally going to try the ham and eggs....great idea!!
