This week's recipe comes from that birthday feast. I apologize - it is not meant to be a healthy recipe in the least. But we have used it for both onion rings and the fish Dan and Clay caught on their trip. It is the best batter recipe I have ever found for deep frying, and so simple! Dad, if you get the urge to make your own English style fish and chips, this is the one to use. We also experimented with a few chunks of cheese and it worked great. So, here it is.
Unbelievable Batter
1c. flour
1/2 c. milk
1/2 c. water
2 Tblsp. baking powder
1 tsp. salt
Whisk it all together until smooth. Dip what you want to deep fry in it, then fry it up crisp.
Hints: add seasonings to give it more flavor depending on what you're making. Try one piece first and see if it is enough. We found we added quite a bit of seasoning salt and Montreal steak spice. You could also replace the water with ginger ale for a different tasting fish.
*The original recipe calls for 1/4 c. of baking powder. Yikes! We cut it in half and it worked great. Those of you in mountain areas may find you need a little more. Just play around with it.
