Make-It Monday

Here's a really yummy pancake recipe that just spices up the old standby.  Great if you have kids who want pancakes everyday, and super easy to make.  Plus, they might just be a little healthier!

Blueberry-Cornmeal Pancakes

1 c. flour
2 Tbslp. cornmeal
1 Tblsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
1 beaten egg
1 c. buttermilk or sour milk (place 1 Tblsp. of lemon juice/vinegar in measuring cup, fill with milk to make
                                              1 cup, then let sit for 5 mins before using)
2 Tblsp. oil
1 c. fresh or frozen blueberries

Mix dry, add wet, fold in blueberries gently.  Cook on a griddle like you would any pancake.  Serve with sprinkled powder sugar, syrup or (Dan's fave)  pear butter.  Enjoy!

  1. Made these tonight for pancake Tuesday. AWESOME! The cornmeal makes them a bit crispy.
