This week I am featuring a somewhat healthier chocolate chip cookie. I know, I know - if you wanted healthy you wouldn't make cookies. Cookies are supposed to be buttery and creamy and, well, not good for you. I have to confess, I am a cookie fanatic. Not so much eating them (other than the dough), but making them. Ask any of my family, friends, old roommates - I love to make them. New cookie recipes give me a bit of a thrill. But, in an attempt to begin improving our eating habits I came across this recipe that, surprise, surprise, actually tasted good. The kids didn't even notice the difference, and I find the whole wheat flour gives them kind of a nutty flavor. The original recipe calls for half oil, half margarine, but when I looked at my products the margarine actually has a lower calorie count per 2 tsp, so you decide. All margarine would probably give them an even better texture. I tried the following amount just to see how they were, but if you have a bigger family like us I would definitely double. Healthier Chocolate Chip Cookies
3/4 c. rolled oats - pulse in food processor or blender to make a flour consistency
Combine with:
1 c. whole wheat flour
1/2 tsp. baking soda
1/2 tsp salt
In another bowl, beat the following together til light and fluffy:
1/4 c. butter
1/4 c. oil
1/3 c. sugar
1/3 c. brown sugar
1 egg
vanilla
Add the dry ingredients and mix. Bake at 350 for 10 minutes. Cool and try to get one before the kids.
This looks interesting. You might like the chick-pea choc. chip recipe that I have. I'm actually a cookie loser. I love to bake them but often I end up with hockey pucks. I'm not sure why......my kids would rather eat store bought cookies! Lame!!
